Good morning, Friends!

Happy Monday!  Man, here’s hoping this week is 10x better than last…

not sure I can handle two bad weeks in a row!

So, let’s start on a good note!

Winter recipes

I hope that you are having a relaxing weekend!

My saturday featured fun cupcake baking with my little sister…

We used a box of yellow cake mix, divided into 3 different bowls to make multi-colored cupcakes with boiled sugar frosting!

Yummy!  Thank goodness that Bella took most of them home to share!

Here are some other fun winter recipes that I’m enjoying this year:

Have a great Sunday.

Seems like it couldn’t come fast enough!  What a week!

Are you dragging through January?  I can’t say I blame you…

Between cold/gross weather, shorter days with lotsa dark, and general grumpiness- it’s been rough!

Hang in there, we are almost to February.

So, here is just a little bit of fun for your Saturday morning.

I’ll be back tomorrow with some more recipes for you, and

on Monday with some favorites to start your week!

Family Photo (hint: look for Grandpa!)

Have a great Saturday- remember to put your feet up for a few minutes and steal some time for yourself and a good laugh- even if you are in the middle of chaos!

WIAW… with a few cheats…

Ok, let me start with- how the @#$# is it Wednesday?

I mean, really…

So, instead of doing the proper WIAW post with Jenn’s party…

(Insert cute WIAW logo here)<—– having major ‘tech’ issues today.  argh.

(By the way, thanks for hosting, Jenn!)

I’m going to get a little creative, so, may I present:

What I Wish I Ate Wednesday

(with the truth printed below sans pictures because I had a total blonde ‘day’!)

Wish Breakfast:  Shrimp and Grits Eggs Benedict

(Reality: Greek yogurt, 1/4c blueberries and a crushed Nut Crunch bar)

Wish Lunch: BLT with Avocado and Pink Chili Mayo

And, Onion Rings

Reality: Leftover chicken lettuce wraps in salad form with roasted veggies

Wish Dinner: Beef Tenderloin with Port Reduction and Blue Cheese

Reality: Quinoa Healthy Mac and Cheese

Wish Dessert: Red Velvet Layer Cake

Reality: A row of Caramel Delites.  Yup.  Thank god for making it to the treadmill/gym today.

So, in reality, I don’t think this would be a day of meals, but these would be some of my ‘favorites’- hopefully, the rest of the day would be balanced out with some healthier options and a long walk around the block ;-)

Just a little fun for your Wednesday!

Click the picture or the title for the recipes and just let us know what time we should come over for breakfast/lunch/dinner/dessert!

Planning for Success

So, in case you hadn’t noticed, I’m a little type A (++++++).

Lately, we’ve been so busy with personal and professional commitments, that all levels of organization and planning have gone out the door.

But, this week, we got back into one of my favorite weekend habits: sunday morning clip, list and sip!

Ok, that’s a dramatic title for the reality: we sit around in our pjs, drinking cofffee, reading the sunday paper, clipping coupons and making our shopping list for the week.

We’ve also started to develop a weekly meal plan, with notes and ‘chef’ assignments.

My mother-in-law got me these neat magnet notepad as a Christmas gift and it’s perfect for planning out our weekly shopping, meals and schedules.

As I look through blogs and cookbooks for the recipes (usually ones that have lots of leftovers for lunches!), Brian clips coupons and reviews what we have in the fridge/pantry.

Pretty good teamwork!  It’s really helped us stay on track with healthy eating plans, saving money by having a plan for the grocery store and saving time/hassle when we get home late and tired from work!

Plenty of room to write a lunch/dinner meal plan (we don’t usually plan breakfast, since we both eat pretty much the same thing on our way out the door!).

We also use the notes at the bottom for reminders or things we forgot at the store!  I like to prep a few servings of quinoa, turkey bacon and roasted veggies each week to have on hand- makes for super quick and easy sides!

Here are some options I found online, if you think something like this might help you!
