Friday Favorites- Pinterest Food

It never fails-

Every time I look at Pinterest, I get hungry.

Here are 3 recipes that I’m absolutely going to try this weekend:

Crab Rangoon Cups

Oh yeah!  These look awesome and super easy to put together.  Honestly, I might serve them as dinner with a big, green salad!

Parmesan Quinoa Pancakes w/ Whipped Tomato and Feta Sauce

Holy Yum.  Those are calling my name.  I’m thinking about serving them for dinner on Sunday night, and freezing extra for lunches or a quick dinner during the week!

Spinach, Caramelized Onion and Feta Quiche

Quiche has become one of our favorite weeknight dinners.  We can prep it in advance, or throw it together that night and hang out with Maddie while it bakes!  This looks yummy, although I’ll have to chop the onions super small to sneak them in for Brian…

Spinach and Ham Quiche

This has become one of our ‘go to’ recipes!

Prepped on Sunday night, reheated on a weeknight.  Generally we make several and freeze them for later weeks…

Here’s a ‘suggested’ list of ingredients, per quiche.  Adapt to fit your needs and your tastes!

Spinach and Ham Quiche

1 Pre-made 9″ pie crust

2c fresh spinach, washed and chopped (or half a frozen pack of chopped spinach)

3/4c cubed ham

1 1/4c shredded swiss cheese (or swiss/cheddar blend)

5 eggs

1 1/4c milk

Pepper, Salt, Paprika  to taste.

Preheat oven to 375 degress..

Layer spinach, ham and cheese in bottom of pie crust.  Slightly beat eggs and milk, pour on top of ingredients in pie crust.  Sprinkle top with salt, pepper and paprika.

Bake for 60 minutes, or until egg is ‘set’.  Enjoy with rice or garlic bread and a green salad… can be frozen and reheated for a later meal!

Muffin (top)

a little humor in the title this morning :-)

But, seriously, let’s talk muffins.

I’m looking for a quick, easy and mostly healthy way to ‘grab and go’ in the AM.  I usually need a little something as I am heading out the door and then I follow it up with a yogurt and fruit at the office..

I’m thinking that making a batch of muffins is the perfect way to go. It gives me control over the ingredients and is the perfect size to eat on the go.

I generally stick to muffin mixes, but I’m going to attempt Cooking Light’s ‘from scratch’ recipes… Healthy Muffin Recipes

(BTW, don’t you think that Cooking Light should be giving me a kickback for all the traffic I sent their way every week?!  It’s SO my ‘go to’ healthy recipe resource!).

Anyway, I digress…

I think first up will be the Tuscan Lemon Muffins.  They look yummy, less than 30g of carb per muffin and I might even go wild and crazy and add some poppy seeds into the mix!




The look like the perfect cure for driving and eating on a rainy, grey and miserable day!

I’m also eyeing the  Blueberry Oatmeal muffins.  I’m a sucker for the classics with a twist.  Plus, I have a huge bag of blueberries in the freezer that really need to be used to make some space for baby meals!

I might up the craziness in these muffins by adding some chopped pecans!  Yum!

Lasagna… 25 different ways!

I’ve really been in the mood for a bubbly, hot, oozing with cheese lasagna!

Partly, because it would be so easy to come home and slide it from the fridge to the oven and hop on the treadmill- with dinner ready in 45 minutes!  And partly, because it’s just plain yummy comfort food!

So, I was cruising the internet for some different variations… I always try and add veggies (at least spinach!) to my ricotta to up the veg quotient, but I figured there were probably other variations…

I’ve made a variation of this before, but I think this is going into rotation this week…

Easy Dinners!

It’s been one of those weeks…

On top of all the excitement this past weekend, we had our baby birthing class last night… OMG.  That’s all I’ll say, OMG.

There is a certain reality sinking in about this whole ‘having a baby in less than 2 months’ situation…

So, I’ve been searching for some easy recipes that I can throw into the crock-pot in the morning and have ready to eat when we get home in the evening!

Cooking Light had my number this week with their post on 105 Slow-Cooker Favorites.

I’m thinking that the Pesto Lasagna with Spinach and Mushrooms will be on the menu for Friday…




And, for a weekend treat (and weekday leftovers..) I’m thinking this Potato Soup will be happening!
